The Best Way to Preserve Coffee
When i was still a barista,I was often asked by customers on what is the best way to preserve their coffee or what are the ways to keep it fresh.
- If convenient, purchase only as much fresh coffee as you will use in a week. The closer you
can brew your coffee to the date it was roasted, the fresher it will be in your cup. Buy next
weeks coffee next week, and so on. - After a bag has been opened, keep the coffee in an air tight container. It’s critical to keep
oxygen, moisture, and light away from your coffee. - The single most effective way to improve your coffee experience at home or work is to grind
the bean before you brew. Coffee stays fresher in its whole bean form. Grinding your coffee
too soon increases its surface area exposure to oxygen, which will stale the coffee
tremendously faster than whole bean coffee. - To prevent under-development or over-extraction of the flavor compounds in your coffee,
grind specifically for YOUR OWN filter and/or brewer. A coffee ground for a french press is
not the same grind for drip paper filters, or espresso for example. Your grind is determined by
the amount of time that your coffee will be in contact with the water in the brew cycle. Each
brewing method is different, each filter is different. Grind accordingly. - Maintain proper coffee-to-water ratio. For most drip coffee makers, we recommend starting
with 10 grams of coffee (one standard coffee scoop) per 6oz. of water - Use quality water. Water represents more than 98% or your beverage. Use fresh, filtered, or
even bottled water. - Do not refrigerate! Fresh coffee is an odor magnet, even when it is stored in an air tight
container. Please do not subject your fresh coffee to the odors of the contents within your
fridge. Unless that is, you enjoy that suble hint of raw onion and leftover chicken in your
morning brew… you get the point. Keep a week’s worth or less of your coffee dry and air tight
at room temp. Freeze any excess coffee, and thaw before you grind, never grind frozen
beans!
I used to be a Starbucks Barista and I would say that I missed being behind the counter and calling up drinks. I missed the free beverage,the snotty customers,the honest co-worker, the product discounts and that Iced Guatemala with caramel syrup everyday.

So the next time one of your customers orders a Moroccan Green tea with a dash of orange juice, grapefruit juice and a pinch of sugar, SMILE! and serve it up.

The right design and decor to a coffee house are crucial to its success. Like it or not coffe consumers are judgmental people,and judge a shop solely on its appearance. They want to feel as if they are in a hip downtown New York City cafe, as opposed to a sandwich shop in Kentucky (no offense to the shops in Kentucky, if you are on point with your decor). The style that is big now in coffee shops is the Vintage, living room sort of staging. I personally recommend you go to Ikea and start buying (go with a design in mind..or on blueprint, both work fine depending on your level of OCD). You can get a comfy oversized Chair for under $100.

Like most New Yorkers, I used to be a frequent customer at starbucks. The service was crappy, the staff had no sense of hospitality, and quite honestly the quality of coffee is not all that great. So, I began my quest for a small homey cafe, with friendly staff and Quality coffee. Your staff can make or break any customers decision to either visit regularly, or have this be the last time that they buy from your small business. Tips to hiring qualified staff: Hire friendly and perky individuals with not much experience, the less experience that your intervewee has, the more eager they will be to learn and to over compensate for their short comings. Personality is key when hiring staff to work at your cafe, if they do not have the proper experience but you see potential in them you can always send them to a barista class, that shows them how to work the espresso machines and so on.( You should send all your staff to this class either way, experienced or not).
